My 10 Favorite Healthy Comfort Food Recipes - Recipes from The Kitchn

A healthy dinner means different things to different people. For me it means using as many "real food" ingredients as possible. I lean hard on fresh produce from my CSA and the farmers market and lean proteins like fish, chicken, pork, beans, and legumes. I have a soft spot for baked goods, cheese, and the occasional creamy sauce. It's all about balance and moderation for memostly wholesome with a side of indulgence once in a while. Maybe you can relate?

From Asian-inspired cauliflower fried rice and stuffed sweet potatoes, to veggie stir-fry and easy chicken tacos, these are my 10 favorite recipes for a healthy, comforting dinner.

1. Saucy Skillet Salmon

I have been making this recipe on a regular basis since Sheela first posted it, and now that we are knee deep in tomato season it's better than ever. I love tossing some fresh torn basil into the skillet, and pairing this with sauted spinach and pearled couscous or quinoa.

2. Weeknight Vegetable Stir-Fry

Quick stir-fries are one of my favorite meals for getting a dinner full of veggies on the table. It's flexible enough to use whatever veggies I have on hand, and when I am feeling especially hungry I bulk it up with some extra-firm tofu or chicken.

3. Sweet Potatoes with Chickpea Tomato Sauce

When I really do not feel like cooking, but want something healthier than takeout, this is one of my favorite fallbacks. Part of my Sunday meal prep is roasting a few sweet potatoes, so all that's left to do is reheat them and make the chickpea and tomato filling.

4. One-Skillet Salsa Pork Chops

No matter how many times I make this recipe, it always has a way of making pork chops feel exciting. Use any salsa you have handy, store-bought or homemade (I like to rotate between classic tomato salsa and salsa verde).
